The first day of Summer is this weekend and that means things are going to heat up. If you like to hangout by the pool or get together with family and friends this season, these five dishes are a few tasty ways to bring the party together.
Corn and Summer Vegetable Sauté– This healthy dish will help liven up any barbecue. With a blend of summer vegetables and a little cilantro, this dish is easy to make and has a robust, natural flavor. It is also versatile because you can use whatever combination you like. The recipe calls for sweet corn, jalapenos, green onion, and okra, but you can add any vegetables or meats you think would make a good combination!
Chicken and Summer Vegetable Tostadas– If you want to feel like you’re sitting on a beach in paradise, these tostadas help create that atmosphere on a warm summer night. All it takes is some sautéing and a little cooking for the chicken and you have one flavorful meal. Mixed with salsa and a variety of vegetables, this dish is a summer favorite.
Lemon Parsley Popcorn– Your favorite summer snack with a burst of flavor! This recipe is an easy and delicious revamp to the traditional snack. Adding a splash of lemon zest and parsley to regular popcorn instantly creates a gourmet party snack. It’s so easy to make, you can wrap up and go within minutes.
No-bake Fruit Pizza– In our opinion, this dish is one of the most fun and flavorful ones on our list. You can enjoy it as healthy breakfast dish or cool midday snack. We love it because it brings a lot of fresh summer fruit flavors into the mix. All you need is whole wheat tortillas or pita bread, your choice of yogurt, and your favorite summer fruit on top. The ability to switch up the ingredients in this dish is half the fun. Add slice nuts, sprinkle on coconut, or a switch out the yogurt “sauce” with such sauces as Nutella or vanilla pudding to make it your own!
Salami Roll ups-This is one of our absolute favorite summer dishes. These little roll ups are so simple and easy to make, but they bring an immense amount of flavor to the table. All you need to do is roll some of your favorite ingredients in salami. You can use almost anything to put inside of the salami. Some ingredients we suggest are: cream cheese, and such hard cheeses as cheddar, Swiss, or provolone.
With any of these recipes, it is always important to consult your doctor before you make any changes to your diet. This article is for informational purposes only.
